Agastache foeniculum, also known as anise hyssop, blue giant hyssop, fragrant giant hyssop, or lavender giant hyssop, is a perennial plant native to much of north-central and northern North America. It is a clump-like, upright plant that can grow up to 4 feet tall with oval, toothed leaves and showy verticillasters of bright lavender flowers in June to September. Anise hyssop is tolerant of deer and drought and attracts hummingbirds and butterflies, making it an attractive choice for gardeners. The soft, anise-scented leaves have been used medicinally by Native Americans and can be used as a seasoning, in tea, potpourri, and salad. The purple flower spike is favored by bees who make fragrant honey from the nectar. Grow anise hyssop in well-drained, sunny sites in gardens or containers.
