Rumex acetosella, commonly known as Sheep Sorrel, is a weed that is native to Europe and Asia but has naturalized in temperate North America. This perennial plant has green arrowhead-shaped leaves and red-tinted stems, sprouting from an aggressive rhizome. Female flowers are maroon in color and emerge from tall, upright stems. Although invasive, Sheep Sorrel offers medicinal benefits as a detoxifying herb with potential as a long-term treatment for chronic disease. The leaves can also be used in soups, and as a curdling agent in cheese-making, offering a tart, lemony flavor.
